Fresh salad with Za’atar rubbed bread croutons

This yummy salad is best when served cold with fresh homemade bread croutons. This recipe is always on top of my list as it is so easy to prepare, saves time and cost. The freshness of lettuce, parsley, and basil lends a wonderful aroma and the za’atar spice adds a new dimension to it. The combination of mayonnaise and olive oil dressing mixed with garlic and herbs balances the acidity. Well, it has got crunch from the croutons, sweetness from the corns, and served with this delicious dressing.

Recipe of Fresh Salad with Zaatar Rubbed Bread Croutons

Ingredients:
1 Thinly sliced Onion
1 Medium size chopped Red bell pepper
1/2 cup Boiled sweet corns
A handful of Torn Lettuce
A handful of cherry tomatoes cut into halves
A handful of Fresh torn Parsley
A handful of Fresh torn Basil
FOR DRESSING-
1 cup Eggless Mayonnaise
1 tbsp Extra virgin Olive oil
4-5 Coves of finely chopped Garlic
2 tsp Dry herbs
Salt as per taste
For bread croutons:-
4-5 Slices of brown or white bread
1 tsp Za’atar spice
2 tsp Extra virgin Olive oil

Method:

1. Mix all the vegetables and salad leaves and keep it aside in a bowl and let it chill in the refrigerator for an hour.

FOR THE BREAD CROUTONS:

1. For bread croutons cut the bread into very small cubes and drizzle olive oil on it.

2. Add Za’atar spice mix and rub it well with the small bread pieces.

3. Now heat a non-stick pan and gently put the bread croutons on the pan and drizzle some more olive oil and let it roast on low heat for 7-8 minutes till the bread croutons are brown and crispy.

4. Now heat a non-stick pan and gently put the bread croutons on the pan and drizzle some more olive oil and let it roast on low heat for 7-8 minutes till the bread croutons are brown and crispy.

5. Once they are done keep it aside to cool at room temperature.

FOR THE SALAD DRESSING:

1. Mix all the mentioned ingredients in a bowl and whisk it well.

HOW TO SERVE YOUR SALAD:

1. Remove the salad bowl from the refrigerator and add the salad dressing and Za’atar rubbed bread croutons and toss it well. Serve it chilled for a nice appetizer.

2. To avoid sogginess of the croutons, add them only while serving the salad so that it stays fresh and crunchy.
