|180ml sugar syrup (made by boiling equal quantities of sugar and water together)|
|240ml freshly squeezed lime juice|
Kaffir lime leaves have an explosive fragrance, cleanly floral and citrus- not quite lemon, not quite lime. Their aroma and flavor are assertive and lingering, yet delicate. Lemon grass too has a nice citrus flavor. A perfect cooler to quench your thirst this summer.
Divide the kaffir lime leaves, lemon grass pieces and sugar syrup between the glasses and using the end of a rolling pin lightly crush the leaves and lemon grass pieces.
Add the soda water, lime juice and ice and stir well. Stir once more and garnish with kaffir lime leaves and a straw.
