Peel and Chop boiled potatoes into small chunks and keep it aside in a bowl.
Meanwhile, keep all the other ingredients ready in a plate and start the preparations.
Heat 1 tbsp oil in a kadai (pan) on a medium flame and once the oil is hot add cumin seeds and allow it to crackle for 8-10 seconds.
Now add peanuts in it and Fry the peanuts on a medium flame till they are golden brown in color.
This will take around 2 minutes.
Once the peanuts are fried and are brown in color add curry leaves, finely chopped green chilies and boiled potato chunks in it.
Add all the other spices like cumin powder, pepper powder, salt, lemon and crushed peanuts in it.
Stir it very lightly and with a spoon just once so that all the spices are mixed well. Do not over stir it as the potatoes will become soggy.
Now cook the aloo sabzi on a low flame till 1-2 minutes.
Switch off the flame and remove the sabzi in a bowl and garnish with some freshly chopped coriander leaves.
Serve it hot with Rajgira and Kuttu ki Sabzi and panner or Makhana ke Kheer.
