Recipe of Tawa Pulao

Tawa Pulao is a term that all Mumbaikar’s are aware of. I am sure there will be not a single person in Mumbai who is not aware of this Tawa pulao.

Ingredients
  

  • 4 cups Boiled or Steamed Rice
  • ½ cup boiled peas
  • 2 medium-sized Onions
  • 1 big green capsicum
  • ½ cup finely chopped Coriander Leaves
  • 1 small chopped tomato
  • 6-7 cloves of chopped Garlic
  • 1 tbsp Cumin Seeds Jeera
  • 8-10 chopped cashew nuts
  • 3 tbsp Butter Or Oil
  • 2 Green Chilies chopped finely
  • 1 t/s Turmeric Haldi
  • 2 t/s Pav Bhaji Masala
  • 1 tbsp Garam Masala
  • ½ t/s Red Chili Powder
  • Salt as per taste

Instructions
 

  • Take a pan and add butter or oil.
  • Once it is hot add cumin seeds and when they crackle stir in chopped Garlic and cashew nuts.
  • Sauté for a minute on low fire.
  • Now add chopped Onions and capsicums. Sauté until they are crispy and golden brown.
  • Now add the chopped tomatoes and boiled peas. Wait until tomatoes water dries up.
  • Add pav bhaji masala and all the other spices and stir well.
  • Let the vegetable cook for 2 to 3 mins. Combine well with a spoon very carefully.
  • Once all the masalas and vegetables blend well its time to add the rice.
  • Add steamed rice little by gently stirring in.
  • Mix the rice well with the Masalas and veggies without stirring it often and taking care that the rice grain doesn't break.
  • Switch off the stove and garnish the Tawa pulao with some fresh coriander leaves and serve Tawa Pulao hot with Papad and Raita.

Notes

You can make this pulav from leftover rice.
You can also add potatoes and paneer to this pulao. Try making this on a big tawa if you have it at home. Pav Bhaji masala is an essential masala for Tawa pulao as that’s how the bhaiyajis make it street side here in Mumbai.
