This step-by-step pictorial recipe of Kesar Peda Paratha, Saffron Fudge Paratha, or Sweet Paratha is a sweet staple with an amazing variation. This is exactly all you need post-festive days when your kitchen pantry is filled with tons of Pedas, Halwas and Burfis.
Take a broad vessel and add 2 cups of wheat flour, 1 tsp oil and mix it with your fingertips.
Add water slowly and knead a soft dough.
Let the dough rest for 10 minutes.
After the dough has rested pinch 12 small balls out of the dough and keep it aside.
Take 2 balls of the dough and roll them in small circles.
Now place the Kesar Peda in the center of one rolled dough and crush it with your hands as shown in the picture.
Now apply ghee on the outer edge of the rolled paratha and cover it with other rolled paratha
Cover the dough and pinch it lightly from the edges and roll it with soft hands as shown in the picture.
Roll it as thin or thick you want.
HOW TO SHALLOW FRY PARATHAS:
Heat a pan over medium flame and once its hot grease it with 1 tsp ghee and place the stuffed sweet paratha on it.
Wait for 30 seconds before you flip its side.
Let it cook on another side as well and flip it again. Now apply 1 tsp oil on both the sides and cook till you see brown spots on the parathas and till they are cooked well.
Remove the same procedure with all the stuffed dough and pile your parathas and serve them hot as a sweet dish accompanying your meal.
