Carrot Cake Energy Balls

Ingredients

  • 1 cup grated carrot
  • 3/4 cup soft pitted dates
  • 1 tsp cinnamon powder
  • 1 1/2 tsp flax seeds
  • 3/4 cup dry coconut powder
  • 1 tbsp honey

Step 1 of 4

Add dates to a food processor or a high-speed blender and pulse to soften them.

Step 2 of 4

Squeeze the excess water from the grated carrots.  Now add carrots and the rest of the ingredients to the food processor and pulse until it forms like a sticky dough.

Step 3 of 4

Roll the carrot cake mixture into small balls and roll them into dry coconut powder.

Step 4 of 4

Store these carrot balls in an airtight container in the fridge. It will stay good for 4-5 days.
