Linguine Pasta With Aubergine And Tomatoes

Ingredients

  • 1 tbsp olive oil
  • 400 gm chopped tomatoes
  • 1 small onion
  • 2 garlic cloves
  • handful basil leaves picked
  • 2 aubergines
  • 500 gm boiled Linguine pasta

Step 1 of 5

Heat 3 tablespoons of oil in a pan and sweat the onion, garlic, and basil stalks for appx 5minutes.

Step 2 of 5

Add the tomatoes, season well and bring to a steady simmer. Cook for about 10-15 minutes.

Step 3 of 5

Meanwhile, fry the aubergine in the remaining oil until golden then stir into the tomato sauce with the basil leaves.

Step 4 of 5

Cook the pasta according to the packet instructions, drain, then stir through the sauce.

Step 5 of 5

Serve the linguine pasta hot with torn fresh basil leaves and fresh sliced tomatoes.
