Pink Pitaya Pancakes | Dragon Fruit Pancakes

Ingredients

  • 2 pink pitayas | 2 pink dragon fruits
  • 1 cup all-purpose flour
  • 1 cup cold milk
  • 3/4 cup powdered sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla essence
  • 2 tbsp Butter

How to make a puree of pink pitaya?

Firstly, scoop out the pink pitaya with a spoon and keep it aside.

Step 3 of 8

Now blend the scooped out pieces in a blender till it is pureed.

Step 4 of 8

Strain the puree through a strainer and discard all the seeds and collect puree in a bowl.

Step 5 of 8

Now make the pancake batter by adding flour into the puree,

Step 6 of 8

Now add sugar, cold milk, baking powder, baking soda, salt, and vanilla essence into the batter.

Step 7 of 8

Whisk all the ingredients well till the batter is smooth and lump-free. See to it that are no lumps else the pancakes will not be fluffy.

Step 8 of 8

Rest the pancake batter for 10 minutes before preparing them.
