Tomato Rice

Ingredients (1/2)

  • 1 onion finely chopped
  • 2 to matoes finely chopped
  • 2 cup cooked Basmati Rice
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • a handful of curry leaves
  • 1 green chili finely chopped
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander and cumin powder
  • salt as per taste
  • 1 tbsp cooking oil

  • a handful of finely chopped coriander leaves.

Step 1 of 8

Firstly, chop onion and tomatoes and keep it aside, and assemble all the ingredients.

Step 2 of 8

Now, heat oil in a pan and add urad dal, once it starts to crackle and turns light brown in color add mustard seeds and allow it to crackle.

Add green chilies and curry leaves in that pan.

Step 4 of 8

Now add finely chopped onions in the pan and allow it to cook for 2 minutes till they turn brown and shrink.

Step 5 of 8

Time to add tomatoes in the pan and cook for 1 minute before adding in the spices.

Step 6 of 8

Add turmeric powder, red chili powder, salt, and coriander powder and mix everything well till tomatoes are cooked and mushy. This will take around 2 minutes.

Step 7 of 8

Finally, add cooked rice and mix everything well till the spices are mixed well.

Step 8 of 8

Garnish with finely chopped coriander leaves and serve it hot.
