Vegan Green Goddess Panini Sandwiches

Ingredients

  • 1 packet Panini sandwich bread
  • 1 cup Chopped Cucumber
  • 1 Big Ripe Mashed Avocado
  • 1 cup Blanched Spinach
  • 1/2 cup Eggless Mayonnaise
  • 2 cups Fresh peas minty dip
  • 2 tsp minced garlic
  • 2 tsp Oregano and chili flakes
  • 2 tbsp Butter
  • Salt as per taste

Step 1 of 8

Slice the panini bread and apply butter and keep it aside.

Step 2 of 8

In a bowl combine together cucumber, mashed avocado, spinach, mayonnaise, and garlic.

Step 3 of 8

Add oregano, chili flakes, and salt and mix well.

Step 4 of 8

Heat a pan and while it's getting heated prepare for the sandwiches.

Step 5 of 8

Fill the sliced buttered panini pieces of bread with the above filling and fresh pea minty dip.

Step 6 of 8

Apply butter on both the sides and toast the sandwich till it is lightly brown.

Step 7 of 8

Your healthy and yummy green panini sandwiches are ready to serve.

Serve it hot with tomato ketchup or salsa.
