Firstly, take flour, add salt, oil, and water. Knead the dough by adding a little quantity of water from time to time. Make a soft dough and keep it aside.
Now peel the skin of the boiled potatoes and mash it with a masher till there are no lumps.
Now add all the spices mentioned in the ingredients list to the boiled potatoes and mix it well. Taste the aloo stuffing and adjust the salt and spices as per your taste. Keep the stuffing aside for 10 minutes till the masalas are blended properly.
Divide the dough into equal parts and keep it ready on a plate.
Take a small dough ball, press a little with your palms, and sprinkle some flour, and roll into a circle as shown in the picture.
Now place the potato stuffing in the center, keeping some space in between.
Start pleating it by taking the edges together and bringing the pleats in the center.
Press the pleats gently and start rolling by dusting some plain flour on it so that you can roll it smoothly. Roll the parathas smoothly and evenly so that it cooks well.
Place the rolled paratha on a hot Tawa or a griddle, apply some oil and cook aloo parathas on a lower flame. Flip the side when you see golden spots on one side.
Now apply some oil or ghee on this side and press it with a ladle so that the parathas are cooked properly.
Cook it well till the parathas are crispy and golden brown.
Keep repeating the same procedure with all the parathas and stack them.
