Firstly, pre-heat the oven to 200 C for 10 minutes and line a parchment or baking paper on a tray and keep it aside.
Take 3 medium to big size potatoes and wash them well and dry before cutting them.
Now cut each potato in half lengthwise as shown in the picture. Then cut each half into 2 again lengthwise so as to get 4 pieces.
Finally, cut these 4 pieces into 2 halves lengthwise to get a total of 8 wedges.
Take a bowl, pour olive oil, onion powder, garlic granules into it.
To this add minced garlic, fresh parsley, and give a quick stir.
Add salt, pepper powder, and chili flakes and mix everything well.
Now add the potato wedges and toss them evenly till all the wedges are coated with oil and seasoning.
Finally, place all the wedges on the baking tray with the skin side down and bake it for 45-50 minutes till they are brown and crispy.
Turn the wedges once or twice in between to make sure they cook evenly.
When they are baked switch off the oven and remove the baking tray and let it cool down for 5 minutes before serving.
