Firstly, parboil the potatoes in a pressure pan by giving just 1 or 2 whistles. Once the pressure releases open the lid and remove the potatoes aside and let them cool.
Then cut each potato into halves vertically with a sharp knife.
Scoop out the center of the potato with a spoon so that a depression is created to stuff the filling. Keep this mashed
Repeat the same procedure with all the potatoes and keep it aside.
Meanwhile pre-heat the oven at 180 C for 20 minutes.
For the stuffing, heat butter in a pan, and when it's hot add minced garlic, cook for few seconds, and now add chopped onions.
Saute it on a high flame for 2 minutes till it turns brown. Add chopped spinach, salt, and pepper.
Cook for 2-3 minutes till spinach wilts and finally add the scooped out potatoes in it and combine everything well together.
Now take each scooped out potato, and fill it with 1 tbsp of spinach filling and sprinkle with grated cheese.
Bake in a pre-heat oven for 10-12 minutes till the cheese melts.
Finally, garnish with finely chopped coriander leaves and serve it immediately.
