Ingredients
 
 

  • ½ cup Basmati Rice
  • 2 tsp minced garlic
  • 1 tsp cumin seeds / Jera
  • 1 tbsp Cooking Oil
  • 2 tbsp White Chickpea Hummus
  • 2 tbsp Spinach Hummus
  • 1 tsp Black sesame seeds
  • ½ cup diced cucumber
  • ½ cup diced carrots
  • few tomatoes slit lengthwise
  • ½ cup boiled peeled and diced beetroot
  • 1 tbsp Extra Virgin Olive Oil to drizzle
  • A handful of finely chopped coriander leaves for garnish
  • Salt as per taste

Instructions
 

  • Kindly note for this recipe I have used leftover rice and refrigerated White chickpea and Spinach hummus, both these recipes are already there on my website, I will be posting the links at the bottom of this recipe. So please refer to those recipes.
  • Firstly, start your preparation by cooking jeera rice. Meanwhile, you can dice the vegetables and keep them aside for Hummus Bowl.  Heat cooking oil in a pan and add jeera/ Cumin seeds, once they crackle add minced garlic in it.
  • Once, garlic starts turning brown, add finely chopped coriander leaves in it. Give it a quick stir.
  • Time to add leftover rice and mix it gently so that the rice grains do not break, keep the cooked jeera rice in a bowl and let it cool down for a bit.
  • Now, let us start by preparing our hummus bowl. Spoon the white chickpea hummus in the center followed by spinach hummus as shown in the picture.
  • Finally, arrange the cucumber, carrot, beetroot, and tomatoes around the bowl. Sprinkle black sesame seeds, finely chopped coriander leaves and drizzle olive oil just before serving this hummus bowl.
