Ingredients
 
 

  • 2 pink pitayas | 2 pink dragon fruits
  • 1 cup all-purpose flour
  • 1 cup cold milk
  • ¾ cup powdered sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 2 tbsp Butter

Instructions
 

  • How to make a puree of pink pitaya?
  • Firstly, scoop out the pink pitaya with a spoon and keep it aside.
  • Now blend the scooped out pieces in a blender till it is pureed.
  • Strain the puree through a strainer and discard all the seeds and collect puree in a bowl.
  • Now make the pancake batter by adding flour into the puree,
  • Now add sugar, cold milk, baking powder, baking soda, salt, and vanilla essence into the batter.
  • Whisk all the ingredients well till the batter is smooth and lump-free. See to it that are no lumps else the pancakes will not be fluffy.
  • Rest the pancake batter for 10 minutes before preparing them.
  • Heat a non-stick pan and brush it with butter. Now add 1 spoon of batter and spread it on the pan.
  • Apply slight butter and wait for 1-2 minutes. Once you start seeing bubbles on the side, lift it carefully, and see if it's cooked golden brown.
  • Finally, flip the pancake and cook golden brown on the other side as well. Press lightly on the edges so that it cooks properly. Repeat the same procedure for all the pancakes.
