Ingredients
 
 

  • 1 medium-size chopped purple cabbage
  • 1 medium sliced onions
  • 2 tsp minced garlic
  • 1 tbsp Olive Oil
  • 1 tsp freshly ground pepper powder
  • 2 cups vegetable stock or water
  • salt to taste
  • 1 tbsp fresh cream

Instructions
 

  • Firstly, heat olive oil in a pan and add sliced onions and minced garlic and saute for 2 minutes till brown.
  • Now add chopped purple cabbage in it and stir on a high flame for 3 minutes.
  • Cook till the cabbage turns brown and shrinks a bit.
  • Add 2 cups of water, salt, and pepper powder in that and boil the cabbage mixture for 3 minutes.
  • Switch off the flame and let it cool for 10 minutes and then blend it in a mixer till smooth.
  • Garnish your purple cabbage soup with fresh cream and serve it hot.
