Ingredients
 
 

  • 1- liter Full-fat milk
  • 15-20 Almonds soaked in water
  • 10-15 Saffron strands
  • 1 tsp poppy seeds
  • ½ cup Sugar
  • 1 tsp Cardamom powder
  • ½ tsp Black pepper powder
  • ½ tsp Dry Ginger powder

Instructions
 

HOW TO MAKE ALMOND PASTE:

  • Soak 15-20 almonds in warm water for 1/2 hour. Also, soak Poppy seeds in water for 1/2 hour.
  • Peel the skin of the almond and puree it in a blender till it forms a smooth paste.
  • Soak saffron strands in hot milk for 30 minutes.

HOW TO BOIL MILK:

  • HOW TO BOIL MILK:-1. Boil 1-liter full-fat milk in a heavy bottom pan. Add sugar, cardamom powder, pepper powder, dry ginger powder to the boiling milk, and boil the milk for 10 minutes.
  • Once it comes to a boil, add the almond paste and saffron strands.
  • Let the milk boil for 10-15 minutes on a medium flame stirring it in between till the milk reduces in quantity.
  • Add sugar and cardamom powder in the boiling milk and boil it for another 5 minutes.
  • Switch off the flame and let the milk cool down.

HOW TO SERVE:

  • Serve this Almond Saffron milk or Kesar Badam Doodh either hot or once it comes down to room temperature chill it the refrigerator for 2 hours and serve it chilled.
  • Garnish with Almond flakes and I personally like it cold.
