This Broccoli and almond soup is nourishing, healthy, and filling. Broccoli is rich in Vitamin C and almonds are rich in Vitamin E so in short this bowl is totally packed with nutrition that tastes absolutely great.

Ingredients
  

  • 1 A big floret of broccoli chopped
  • 1 Onion minced
  • 1 tsp Garlic minced
  • 1 tsp Green chili paste
  • 10-12 Blanched Almonds
  • ½ cup Fresh cream
  • 2-3 cups Veg stock
  • 2 tbsp Butter
  • 1 tsp Olive oil
  • SALT AND PEPPER AS PER TASTE
  • 8-10 Almond flakes
  • Fresh basil to garnish

Instructions
 

  • Take a non-stick pan and heat butter in it.
  • Add minced onion, garlic and green chili paste and saute for a minute.
  • Add chopped broccoli pieces in it and saute for another 2 minutes.
  • Now add vegetable stock and salt and let it boil for 10 minutes.
  • Switch off the gas and add blanched almonds and fresh cream.
  • Blend the above mixture in a blender till you get a smooth and creamy consistency.
  • 7.. Heat the soup for 2 more minutes and pour it in the soup bowl.
  • Garnish with almond flakes, fresh basil leaves, and 1 tsp of extra virgin olive oil.
