Corn and Cheese Crostini is an appetizer that is made with toasted or grilled bread loaf and topped with your choice of vegetables. Here in this recipe of Corn and Spinach Crostini, I have used boiled sweet corns and Spinach.
1loafFrench bread or Garlic bread loaf – cut into ½” thick slices
2potatoes boiledpeeled and mashed
¾tspsalt
½tsppepper
¼tsporegano
2tbspoil
2tbspcorncanned or frozen
2cupsfinely chopped spinach
GARLIC BUTTER:
3tbspsoftened butter
½tspminced garlic – crushed
a pinch of salt
¼tspfreshly crushed pepper
TOPPINGS:
½cupgrated cheese preferably parmesan or mozzarellaoptional
2tbspolive oil or melted butter
Instructions
Heat oil and add finely chopped Spinach, saute it few seconds and add mashed potatoes, corn, salt, pepper, and oregano. Cook for about 2 minutes and remove from the heat.
Prepare garlic butter by mixing softened butter with garlic, salt, and pepper.
Cut French loaf or garlic bread diagonally into ½” thick slices. On each slice spread some garlic butter.
Arrange the potato, corn, and spinach mixture on it. Cover with grated cheese(optional).
Spoon a little olive oil or melted butter on top of the cheese.
Bake in a preheated oven at 180ºC/350ºF for 10 minutes or till the base of the bread turns crispy and the cheese melts. Serve it hot.
