Ingredients
 
 

  • ¼ cup rice small-grained
  • 1 ½ ltr full-fat milk
  • ½ cup fresh cream
  • 2 cups ugar
  • ½ tsp cardamom powder elaichi powder

For Fruits

  • 2 cups pomegranates
  • ½ cup diced chickoo
  • ½ cup diced apples
  • ½ cup diced pears
  • ½ cup diced bananas
  • ½ cup whipping cream

Instructions
 

  • Wash the rice grains with water and soak it in water for 10 minutes.
  • Take a heavy bottom pan and pour milk in the pan.
  • Heat the pan and let the milk come to a single boil.
  • Now add the rice grains and stir it well.
  • Let the rice get cooked in the milk on a low flame.
  • Keep stirring in between so that the rice doesn't stick to the bottom of the pan.
  • Rice will take approximately 35-40 minutes to cook.
  • Now add the sugar and cardamom powder and stir well and let it cook for again 10-12 minutes till the milk becomes creamy and thick.
  • Once the desired consistency has attained switch off the gas and remove the kheer in a glass bowl and let it cool in room temperature.
  • Dice the fruits into small cubes and mix all the fruits in a bowl.
  • Keep aside a handful of pomegranates to start with the first layer.
  • Chill all the fruits before using except banana, Beat the whipping cream till it is soft and attains its peak.

HOW TO START LAYERING PARFAIT

  • Take 2 long glasses and start with layering.
  • First, put some handful of pomegranates followed by 2 spoons of rice kheer.
  • Now add 1 spoon of whipped cream and top it with mixed fruits.
  • Finally, top it up with whipped cream and garnish with mint and edible flowers if you wish to.
