Ingredients
  

  • 2 cups fresh shelled peas
  • 1 cup fresh mint sprigs
  • ¼ cup fresh coriander leaves
  • 2 tablespoons lemon juice
  • 1 small clove minced garlic
  • 1 small cup chopped tomatoes to garnish
  • 1 tsp. olive oil
  • Salt

Instructions
 

  • Bring a small pot of salted water to a boil.
  • Add peas, cook until tender, about 8-10 minutes.
  • Drain and run under cold water.
  • In a food processor, pulse peas, mint leaves, coriander leaves, lemon juice, garlic, and olive oil for about a minute.
  • Remove it a bowl and serve it fresh with vegetable Crudités.
