Ingredients

  • 10-12 Steamed Idlis
  • 2 tbsp Oil
  • 1 big Onion
  • 1 big Carrot
  • 1 tsp Mustard seeds
  • 1 tsp Turmeric powder
  • 2 tsp Red Chili powder
  • 2 tsp Coriander Powder
  • A Handful of Finely chopped coriander
  • 1 tsp Lemon juice
  • Salt as per taste

Instructions

  • I am using leftover idlis for this recipe as it will taste best with it.
  • Make small chunks of idlis and keep it aside.
  • Peel Carrot and Onion and chop them finely into small chunks.
  • Heat oil in a pan and once its hot add mustard seeds in it.
  • Once mustard seeds start to crackle add finely chopped onion and carrot to it.
  • Saute it for 4-5 minutes until onion and carrot are cooked properly and tender.
  • Now add turmeric powder, coriander powder and red chili powder in it.
  • Give it a nice stir and sprinkle salt as per the taste.
  • Finally, add idli chunks to it and mix it well so that all the spices and veggies coat properly.
  • Cook it for 2-3 minutes stirring in between so that the idlis don't stick at the bottom of the pan.
  • Switch off the flame and add lemon juice and garnish with finely chopped coriander leaves and serve it hot.
