This Paneer Bhurji sabzi is a very appetizing, scrumptious easy veg recipe that whips up in a jiffy. It is made with homemade crumbled paneer and cooked along with onion, capsicum, and tomato with subtle use of spices.
Once it is hot add cumin seeds and let it crackle for 20 seconds, later add finely chopped onions and saute it for 2 minutes.
Now add capsicum, green chilies, and ginger-garlic paste. Saute for another 2-3 minutes stirring in between till the onions and capsicum are cooked properly and the rawness of ginger-garlic goes.
Add chopped tomatoes, salt and let it cook for 3- 4 minutes till the tomatoes are cooked properly.
Now add turmeric powder, Kashmiri red chili powder, coriander powder, garam masala in the gravy and stir till all the spices are blended well.
Now add crumbled paneer and stir for another 2 minutes till all the gravy, spices and paneer are incorporated well.
Don't over mix it. Finally, add lemon juice and garnish with fresh coriander.

HOW TO SERVEServe this dry paneer bhurji immediately after cooking with hot phulkas, dal, and boondi raita. This can also be a nice option for lunch boxes as it is a dry subzi and it won't spill in the boxes.
