Zucchini and Broccoli fritters are a super tempting and interesting starter to indulge. It is a perfect tea time snack as well. It is fairly easy to cook and kids will love them too. It is vegan, healthy, and nutritious as well. I have used Roasted and powdered Oats to bind these fritters.
In a bowl, combine the zucchini, broccoli, garlic, green chilies, onion, and chili powder, salt and mix together until well combined.
Heat up a non-stick frypan with a bit of olive oil, once the pan is hot, spoon some of the mixtures into the pan (i made little ones but you can make one big one too) let it cook for about 2-5mins or until u can see that it is cooked and the bottom is browned.
Then flip them over and cook on the other side for another few minutes until its browned. Zucchini and Broccoli Fritters are ready to serve it with salsa or tomato ketchup.
