In a large bowl, crumble cottage cheese and mash it lightly with the help of a fork.
Add Cornflour, vanilla essence, powdered sugar, baking soda, baking powder and mix well.
Now add in all-purpose flour, (leaving little flour aside for rolling) and dry cranberries, then mix well again.
At this point, knead the mixture like a dough, you do not require to add any milk , the moisture content in the cottage cheese will help to bind the dough.
In a shallow bowl keep the remaining flour to roll or the pancakes.
Take a lemon size ball of dough, flatten the side of the ball to get a cube-shaped pancake.
Now with the help of butter knife sharpen the edges of the pancakes and rub it into flour on all the sides and shake off extra flour. Repeat the same process with the remaining dough.
Heat a non stick pan and add 1 tbsp of Butter, and gently put Syrniki into the pan.
Cook for about 2 minutes each side, till all the sides are golden brown and cooked properly. At this point you can gently prick a tooth pick to check if is cooked well from inside.
Now transfer all the Syrinkis into a bowl. You might need to cook pancakes in 2 batches , if you cook 6-7 together at a time.
Now dust it with powdered sugar and serve it hot, as it will not taste that good once it cools down
