Ingredients
 
 

  • 1 onion finely chopped
  • 2 to matoes finely chopped
  • 2 cup cooked Basmati Rice
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • a handful of curry leaves
  • 1 green chili finely chopped
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander and cumin powder
  • salt as per taste
  • 1 tbsp cooking oil
  • a handful of finely chopped coriander leaves.

Instructions
 

  • Firstly, chop onion and tomatoes and keep it aside, and assemble all the ingredients.
  • Now, heat oil in a pan and add urad dal, once it starts to crackle and turns light brown in color add mustard seeds and allow it to crackle.
  • Add green chilies and curry leaves in that pan.
  • Now add finely chopped onions in the pan and allow it to cook for 2 minutes till they turn brown and shrink.
  • Time to add tomatoes in the pan and cook for 1 minute before adding in the spices.
  • Add turmeric powder, red chili powder, salt, and coriander powder and mix everything well till tomatoes are cooked and mushy. This will take around 2 minutes.
  • Finally, add cooked rice and mix everything well till the spices are mixed well.
  • Garnish with finely chopped coriander leaves and serve it hot.
