Step 1 of 5
Combine bulgur and boiling water in a large bowl. Cover, and set aside to soak for 1 hour.
Step 2 of 5
Drain away if any excess water. Add olive oil, lemon juice, onions, parsley/Coriander, celery, tomatoes, and cucumber.
Step 3 of 5
Toss to combine all the above ingredients.
Step 4 of 5
Season to taste with salt and black pepper.
Step 5 of 5
Cover and refrigerate for at least 1 hour.
