Baby Corn And Bell Pepper Quesadilla is my way to indulge in the yummies when life gets erratic. It’s such a simple, delicious, and healthy choice when you are really busy.
When the oil becomes hot, add minced garlic and fry for a few seconds.
Now add onions and saute for 2 minutes till they are pink in color.
Once the onions are done add chopped baby corns and mixed bell peppers in the pan.
Let it cook on high heat for 3-4 minutes.
Now add tomato sauce, salt, dry oregano, and chili flakes and mix well.
Remove the filling in a bowl and let it cool.
How to proceed to make the quesadillas
Heat a nonstick grill pan or a regular pan will also do.
Place a flour tortilla on the grill pan and brush with some olive oil.
Apply 1 tbsp of filling on one half of the tortilla.
Add some grated mozzarella cheese on it.
Now fold the tortilla into half and again brush some olive oil.
Let it cook on both sides on medium heat till you see nice grill marks on them and the cheese is melted.
Serve it hot with a nice drink.
