Recipe of Mango Summer Salad
Ingredients
MANGO SUMMER SALAD
1 ripe mango, peeled and cut into chunks
1 medium tomato cut into small chunks
1 green pepper/capsicum cut into small chunks,
1 cucumber peeled and cut into small chunks
Coriander finely chopped
lime juice
Salt and pepper powder as per taste
BROWN RICE
1 cup Brown rice soaked in hot water
1 cup onion and garlic chopped
1 tsp extra virgin olive oil
Method:
MANGO SUMMER SALAD
1. In a large Salad Bowl, toss all the ingredients and mix well.
BROWN RICE:
1. Add salt and boil brown rice in hot water till its tender.
2. Strain the excess water. Take a pan, heat olive oil add onions
and garlic and saute it.
3. Add brown rice to this and mix well and keep aside.
4. In a serving plate add Mango salad and serve with brown rice.
