Easy peasy corn capsicum pulav is a one-pot dish that is filling and flavorsome. It can be accompanied with curd, curd raita, and papads. Relish this colorful and fragrant dish and cook it up!!
Recipe of CORN CAPSICUM PULAV
Ingredients:
1 cup Basmati rice
3/4 cup chopped Onion –
1 cup Green Capsicum –
3/4 cup Corn kernels –
1-inch piece finely chopped Ginger –
3-4 cloves (minced) Garlic –
1 finely chopped Green chili –
1/2 tsp Garam masala powder –
1/2 tsp Chilli powder –
FOR THE SEASONING
1 tbsp Ghee
1 tsp Cumin/jeera seeds
1(optional) Bay leaf
Method:
1. Wash and soak basmati rice for 20 minutes.
2. Drain the water completely.
3. Fry the rice in a tsp of butter for a few minutes.
4. Cook rice adding 2 cups of water, a little salt, 1 clove, and a small piece of cinnamon.
5. This is just to add flavor to the rice and it is optional.
6. Cook corn kernels adding little salt till soft. You can use any corn. I have used American sweet corn.
7. Heat oil, add cumin seeds, bay leaf, when cumin sizzles, add chopped onions, ginger, garlic, green chili and saute until onions turn translucent.
8. Then add capsicum, garam masala, chili powder, and cook for a few minutes. Do not overcook the capsicums.
How to proceed with corn capsicum rice.
1. Add cooked corn and salt needed. (remember we have added salt to the rice and corn, so add salt accordingly).
2. Simmer and cook for a few minutes until everything gets blended well.
