Ingredients
 
 

  • 2 cups Puffed Rice or Kurmura or Mamra
  • 1 Big potato boiled, peeled and cut into cubes
  • ½ cup finely chopped onions
  • ½ cup finely chopped tomatoes
  • 2 tbsp Khajur ki chutney or dates-tamarind chutney
  • 2 tsp Green Coriander chutney
  • 1 tsp Garlic chutney
  • ½ tsp chaat masala
  • 1 tsp fresh lemon juice
  • ½ cup finely chopped coriander leaves
  • a handful of pomegranate seeds to garnish
  • ½ cup of Sev
  • 6-8 puris
  • Salt as per taste

Instructions
 

  • Firstly, take a kadai, add little oil and roast puffed rice or mamra for 4-5 minutes till they are crisp.  You can add a pinch of turmeric if you want. Keep it aside and let it cool. Meanwhile, do the preparations for the bhel puri.
  • Secondly, add diced potatoes, finely chopped onions and tomatoes into the puffed rice and mix it well with the help of a spoon.
  • Thirdly, add the green, garlic, and khajur ki chutney in the bowl of puffed rice and vegetables.
  • Mix all the ingredients well with your hands so that all the chutneys are distributed evenly and at this point, puffed rice will become soggy.
  • Finally, add sev, puri or papdi, chaat masala, lemon juice, give it a quick stir and garnish it with finely chopped coriander leaves and pomegranate
