This Tomato and Beetroot  Soup is such a  vibrant soup that is full of flavor and nutrition. Its striking red color is very appealing to the eyes as well as to the taste buds.

Ingredients
  

  • 1- medium-size beetroot
  • 4-5- medium size tomatoes
  • 2- medium size onions
  • 1 tbsp butter
  • 6-7 cloves garlic
  • 1 tbsp fresh cream for garnishing
  • Salt and fresh ground pepper as per the taste

Instructions
 

  • Peel the beetroots and chop them coarsely.
  • Chop the tomatoes and onions and boil all the above veggies in a pressure pan for 3 whistles on a medium flame.
  • Open the pressure pan once it is cooled down and puree the soup in a food processor.
  • Strain the soup and pour it in a bowl.
  • Take a small pan and add butter in it and once it melts add garlic and saute till 30 seconds.
  • Mix this to the soup and add freshly ground pepper and salt as per the taste.
  • Pour the hot soup into bowls and garnish it with fresh cream.
  • Serve it with bread croutons or breadsticks.
