Chole
Ingredients
- 1 cup white chickpeas | Chole
- 1 tsp baking soda
- For Gravy
- 2 small onions diced
- 1 big tomato diced
- 2-3 green chilies
- 1- inch ginger
- 4-5 garlic pods
- For Chole Masala
- 3-4 bay leaves
- 2-3 dry red chili
- 1-2 small cinnamon sticks
- 1/1 tsp turmeric powder
- 1 tsp dry mango powder | amchur powder
- 2 tsp red chili powder
- 1 tsp coriander powder | Dhania powder
- 1 tsp cumin powder | jeera powder
- salt as per taste
- 1 tbsp cooking oil
Instructions
- How to boil Chole
- Firstly, wash chana in running water and soak chickpeas | chana in overnight in warm water for 7-8 hours.
- Next morning remove all the water from the chole and take freshwater. Take a pressure pan and add chole to it.
- Add 1 tsp baking soda in the chole and also salt as per the quantity of chole and boil till 5-6 whistles. Cook on a medium flame so that chickpeas are cooked properly.
- Once the pressure releases open the lid and leave it aside.
- How to prepare the Chole gravy
- Take all the ingredients mentioned for the gravy and puree it in a blender.
- Heat oil in a pan and add bay leaves, cinnamon stick, and dry red chilies.
- Leave it for 30 seconds and now add the gravy in the oil and cook it for 5-7 minutes till oil releases from the sides.
- Now add all the spices mentioned in the recipe and further cook it for 3-4 minutes till you can smell the aroma and oil releases.
- Add cooked chickpeas | chole in the gravy and stir it well.
- Use all the water of the chickpeas and add half a cup of water if there is no enough water.
- Let it simmer for another 3-4 minutes till all the spices blend well and gravy thickens.
- Once you get the desired consistency of the gravy, switch off the flame and serve it hot. Garnish with finely chopped coriander leaves and sliced onions.

Recipe Notes
- You can also use Canned chickpeas in this curry. However, chickpeas need to be soft and al dente for this recipe.
- Instead of blending the gravy, you can also use finely chopped onions and tomatoes in this recipe.
- There is ready-made chole masala available, you can use that instead of the spices mentioned in this recipe.
- Always serve it hot with Bhatura and sliced onions.
