Recipe of Fresh Minty Dip
Ingredients:
2 cups fresh shelled peas
1 cup fresh mint sprigs
1/4 cup fresh coriander leaves
2 tablespoons lemon juice
1 small clove minced garlic
1 small cup chopped tomatoes to garnish
1 tsp. olive oil

Method:
1. Bring a small pot of salted water to a boil.
2. Add peas, cook until tender, about 8-10 minutes.
3. Drain and run under cold water.
4. In a food processor, pulse peas, mint leaves, coriander leaves, lemon juice, garlic, and olive oil for about a minute.
5. Remove it a bowl and serve it fresh with vegetable Crudités.
