Fresh Veggie and Lettuce Salad

This Fresh Veggie and Lettuce Salad are really delicious and healthy. It is also one of the quickest recipes that are easy to prepare. All you need is lettuce and Vegetables of your choice, I have used Red bell pepper, cherry tomatoes, cucumber, and sweet corns. You can also add the other vegetables of your choice.

The Salad Dressing is fairly simple to make it at home using basic ingredients from your kitchen pantry.  Also, this Salad dressing is light so this salad is indeed refreshing.

Recipe of Veggie and Lettuce Salad

Ingredients
1 head Iceberg Lettuce (remove leaves, wash and place in ice-cold water)
1, finely sliced red bell pepper
washed Cherry Tomatoes
1, peeled and finely sliced Cucumber
1 Bowl boiled Sweet corns
1 1/2 cups Bread Croutons

FOR SALAD DRESSING
1/2 tbsp Lime juice
2 tbsp Extra virgin olive oil
freshly ground Black pepper powder
5-6 cloves of crushed Garlic
Salt as per taste

Method:

1. In a large bowl, place the sliced cucumber, bell pepper, tomato, and croutons.

2. Tear the washed and drained lettuce leaves and place them in the bowl.

3. Toss all the ingredients using two large wooden forks. Cover with plastic wrap and place in the fridge until serving time.

4. Just before serving, whisk the salad dressing and pour over the lettuce salad and toss to combine.

Notes:-
You can Garnish it with Roasted Nuts of your choice and can also throw in some pieces of grilled Paneer

  • Salt as per taste
