Gajar Ki Barfi is a humble and divine sweet delicacy that is prepared for any special occasion or festival at my home. This is one of the most sorted recipes of homemade sweet especially when winter sets in and when red carrots are easily available in the market.
Gajar ki Barfi or Carrot Barfi is a sweet dish that is mainly made with carrots, milk powder, and sugar. It is further flavored with cardamom powder and dry fruits like almond, pistachio, and cashew nuts.

Gajar Ki Barfi / Carrot Barfi
Ingredients
- 750 gms Red Carrots
- 1 cup Milk Powder
- ¾ cup Sugar
- 1 tbsp Ghee/Clarified Butter
- 1 tsp Cardamom Powder
- 2 tbsp Almond and Pistachio
- 1 Leaf Silver/Varakh optional
Instructions
- First of all, wash, peel and grate carrots and keep them ready.
- Now heat ghee, clarified butter in a pan till it's a little hot.
- Add grated carrots to the pan and stir it.
- Cook for 2 minutes till all the water content on the carrot evaporates.
- Add milk powder to it and mix it well for about a minute stirring continuously.
- Now add sugar and cardamom powder to it and keep mixing it till the sugar dissolves completely. Keep stirring continuously for about 4-5 minutes till the mixture releases ghee and doesn't stick to the sides of the pan.
- Grease a rectangular tray with ghee and transfer the Gajar Barfi mixture to it and spread it evenly.
- Sprinkle almond and pistachio on the barfi and lightly press it so that it sticks to the barfi.
- Keep it in the fridge to set for about an hour and finally put a silver leaf or varakh on it, cut into squares and serve.
