Doodh Pak

Doodh Pak is a traditional Gujarati Sweet that is very similar to Rice Kheer or Rice Pudding. This delicious Doodh Pak is very creamy, luscious, and aromatic.

I have many childhood memories attached to this delicacy. Whenever there was a pooja or any festive occasion my mom would prepare this for all of us. It was also frequently prepared during any kind of pooja that we used to have in our home. Doodh Pak and Poori used to be an ideal combination to have it along with batata nu shaak and gajar sambhariya. Wow, I miss those wonderful days!! However, I do prepare Doodh Pak on a few occasions to cherish those lovely memories.

This step-by-step recipe of Doodh Pak with detailed instructions will guide you to prepare this at home.  There are a few different ways to make this recipe. However, the main ingredients remain the same in all ways.

Different ways of preparing this recipe

  1. The first and the most common and authentic way is to simmer the milk for a while and later adding soaked rice and allowing it to cook in the milk.
  2. The second way is to cook the rice separately and later add them to the boiling milk.
  3. The third and the easiest way is to cook this Doodh Pak in a pressure pan where you add milk and soaked rice in the pressure pan and cook till 1 whistle.

Moreover, the addition of cardamom powder and saffron makes this Doodh Pak a notch higher and adds a royal touch.

We have tried the 3rd way to prepare this recipe, i.e cooking it in a pressure pan mainly because,

  • It is easier to cook
  • Consumes less time.
  • You do not need to wait and keep stirring it.

Equipment

Ingredients
 
 

  • 1 cup Basmati Rice
  • 1 liter High Fat Milk
  • ½ cup sugar
  • 1 tsp Ghee / Clarified Butter
  • 1 tsp cardamom powder
  • 8-10 Saffron strands / Kesar
  • 1 cup of mixed nuts almonds, pistachios
  • 1 tsp Dry Rose Petals

Instructions
 

  • Firstly, take 1 cup of Basmati Rice and wash it in running water for at least 2-3 times till you see clear water. Soak Basmati Rice for 15 minutes.
  • Grease a pressure pan with 1 tsp of Ghee and switch on the flame.
  • Add milk to the pressure pan and let it come to a boil.
  • Now add sugar to the boiling milk and mix it well.
  • Finally, add the washed rice to the boiling milk and close the lid of the pan. Cook till 1 whistle and switch off the flame.
  • Meanwhile soak saffron strands in hot milk.
  • Once the pan cools down, open the whistle and mix the Doodh Pak well, add cardamom powder and just heat it for another 2 minutes stirring continuously.
  • Add Saffron milk and garnish with almonds and pistachio flakes.

Step-by-Step Recipe of Doodh Pak

1. Firstly, take 1 cup of Basmati Rice and wash it in running water for at least 2-3 times till you see clear water. Soak Basmati Rice for 15 minutes.

2. Grease a pressure pan with 1 tsp of Ghee and switch on the flame.

3. Add milk to the pressure pan and let it come to a boil.

5. Finally, add the washed rice to the boiling milk and close the lid of the pan. Cook till 1 whistle and switch off the flame.

Recipe Notes

  • Use high-fat milk to prepare this Doodh Pak for a creamier and richer taste.
  • For extracting more flavors from saffron, you can roast saffron strands in a small pan for 30 seconds and later add them to the warm milk.
  • You can also add charoli to this Doodh Pak for the nutty flavor.
  • Serve this hot or chilled, it tastes so good.
