Gujarati Version
Dudhi Chana Ni Dal is also prepared a lot in Gujarati homes. However, it can be made slightly different in all the homes. Some add onion and garlic, Jain people avoid adding that. Step-By-Step Recipe of Lauki Chana Dal
Ingredients:
This recipe will serve 4
1 cup Chana Dal
250 grams bottle gourd/lauki/doodhi
1 medium-size finely chopped Onion
1 big size finely chopped tomato
2 green chilies
1 tsp minced garlic
4-5 curry leaves
1 tsp turmeric powder
2 tsp Kashmiri red chili powder
2 tsp Coriander-cumin powder/dhania-jeera powder
1 tsp garam masala
1tsp cumin seeds/jeera
salt to taste
1 tsp Hing/asafoetida
1 tbsp ghee or cooking oil
A handful of finely chopped coriander leaves
Method:
1. Firstly, wash chana dal with water and soak it in water for 30 minutes.
2. Dice Lauki/doodhi/bottle gourd into small chunks and wash it.
3. Now mix soaked chana dal and lauki chunks, add turmeric powder, salt, 2 cups water and boil it in a pressure pan for 3-4 whistles.
4. Keep finely chopped onion, tomato, garlic, and green chili ready on a plate.
5. Heat oil in a pan and first add cumin seeds, once you hear a crackling sound, add curry leaves, hing, garlic, and chili and stir well for 30 seconds.
6. Now add onion and cook well for 2 minutes till they are brown, later add tomatoes and stir for another minute till tomatoes are mushy.
7. Meanwhile, let the steam of the pressure pan evaporate and open the whistle.
8. Time to add all the spices in the onion-tomato paste, and cook well till spices are blended properly.
9. Finally, add boiled lauki chana dal in the above gravy and let it cook on a medium flame for 5 more minutes till the water becomes less and the gravy thickens.
Important points
- There are 2 ways of making this, 1st way is the one that I have shown. 2nd one is you can cook everything together in a pressure pan and give the tadka in the last stage.
- If you want to make it Jain, avoid using onion and garlic.
- Make it more or less spicy by adding chilies as per your taste.
