Mexican Beans and Corn
Ingredients
- 1 cup Kidney Beans
- 2 tsp minced garlic
- 2 Onion finely chopped
- 1 tomato finely chopped
- 1 tsp dry oregano
- 1 tsp chili flakes
- ½ cup boiled corn
- 2 tbsp Tomato Ketchup
- salt as per taste
- 1 tsp baking soda
- 1 tbsp cooking oil
Instructions

- Firstly, soak Rajma| Beans in hot water for 6-7 hours or overnight.
- Next morning, remove all the water and wash beans.
- Now add water, beans, salt, and baking soda in a pressure pan and boil it till 7-8 whistles.
- Once the pressure releases, open the pan and check if the beans are cooked by pressing it.
- How to proceed with Mexican Beans and Corn?
- Heat oil in a pan and add minced garlic to it. Cook for 30 seconds and later add chopped onions.
- Saute for 3-4 minutes till the onion turns brown and add chopped tomatoes to it and cook.
- Add chili flakes, oregano, and mix it well.
- Now add sweet corns to it and mix well.
- Add boiled beans, tomato ketchup, salt, and cook everything together. Switch off the flame and remove beans and corn on a plate and serve.
