FALAFEL
Make your favorite restaurant dish in your own kitchen in a jiffy -FALAFEL- which is traditionally Arab food and very popular in the Middle East as fast food. These fried vegetarian fritters are served along with hummus and tahini sauce (known as a “falafel plate.”) and its favorite among vegetarians.
Coming back to the health benefits of Falafels. it is indeed VEGAN food a great source of protein and relatively low in fat.
You can also make a nourishing meal out of these falafels by topping it up with tomatoes cucumber and lettuce in pita bread.
Recipe of MIDDLE EASTERN FALAFELS
Ingredients:
1 cup Chickpeas
1 large onion, chopped
2 cloves of garlic, chopped
3 tablespoons of fresh parsley or coriander, chopped
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon red chili powder
2 tablespoons flour
Salt & Pepper
Oil for frying
Method:
1. Soak chickpeas in warm water overnight.
2. Drain chickpeas, and place in a pressure pan with fresh water, add salt and pinch of soda and heat it.
3. Switch off the gas after 3 whistles.
4. Drain and allow to cool for 15 minutes.
5. Combine chickpeas, garlic, onion, coriander leaves, and powder, cumin, red chili powder salt, and pepper (to taste) in a medium bowl. Add flour.
6. Mash chickpeas, ensuring to mix ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste.
7. Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten. Roll it in flour if the mixture is sticky.
8.Fry in 2 inches of oil till golden brown. You can also shallow fry or bake them and serve it hot.

SERVING SUGGESTION
Falafel can be served as an appetizer with hummus or sour cream, or as a main course. Stuff pita bread or wraps with falafel, lettuce, tomatoes, tahini, salt and pepper and dressing of your choice
