Baby Corn And Bell Pepper Quesadilla is my way to indulge in the yummies when life gets erratic. It’s such a simple, delicious, and healthy choice when you are really busy. The tortillas are filled with the goodness of veggies and loaded with cheese. Voila!! what more do you need for a hearty meal on a busy day!! I just love them as they can be made the way you want them. Use the veggies you like and omit the ones you don’t. But please do not avoid cheese, maybe you can control the amount of cheese that goes in. This easy Recipe of Vegetarian Quesadilla with cheese makes a quick meal that can be made in less than 30 minutes.

Some days are so hectic that you just can’t manage to cook an elaborate meal for your family even if you intend to do so. With overloaded work and never-ending chores, life gets too busy. On top of that kid’s exams !! sounds dreadful!! Yes, it is and I am going crazy juggling between all of these. Well during such days what I really want is one dish that is healthy, yummy, and filling. Quesadillas surely come to my rescue and it’s so easy to make. Honestly, during such hectic days, I do not make homemade tortillas. I just buy them from the grocery store so half of my job is already done. When it comes to filling and sauce you can practically add the veggies that may be sitting in your fridge. It’s time-saving and such a wholesome meal in itself. For sauce again you can use ready-made tomato puree or even salsa or pizza sauce. It’s up to you. If you have time you can prepare them at home too.

Recipe of Baby Corn And Bell Pepper Quesadilla

Ingredients:

4-plain flour tortillas
2 cups- grated-Mozzarella cheese
Olive oil for brushing on top
For the filling-
2 tsp- minced Garlic
10-15- baby corns
2 cups- chopped Mix Red bell peppers
2- chopped Onion
4 tbsp- Tomato puree
1 tsp-Dry oregano
1 tsp- chili flakes
1 tsp- crushed pepper
1 tbsp- Olive oil
Salt as per taste.

Method:

1. To make the filling heat olive oil in a pan.

2. When the oil becomes hot, add minced garlic and fry for a few seconds.

3. Now add onions and saute for 2 minutes till they are pink in color.

4. Once the onions are done add chopped baby corns and mixed bell peppers in the pan.

5. Let it cook on high heat for 3-4 minutes.

6. Now add tomato sauce, salt, dry oregano, and chili flakes, and mix well.

7. Remove the filling to a bowl and let it cool.

How to proceed to make the quesadillas
1. Heat a nonstick grill pan or a regular pan will also do.

2. Place a flour tortilla on the grill pan and brush with some olive oil.

3. Apply 1 tbsp of filling on one half of the tortilla.

4. Add some grated mozzarella cheese to it.

5. Now fold the tortilla into half and again brush some olive oil.

6. Let it cook on both sides on medium heat till you see nice grill marks on them and the cheese is melted.

7. Serve it hot with a nice drink.
