Sweet Boondi and Rabri both are my favorite sweets. Well, I do have a sweet tooth and the anticipation of committing the folly of indulging in it is just not bearable. But this super gorgeous ice-cream is so drool-worthy that no one can stop but devouring them.
It is simple to make if you follow the recipe but to get the creamy texture and the perfect taste you need to have patience with this recipe. It will take 1 1/2- 2 days for the final outcome.

Festivals and celebrations are incomplete without a sweet or a dessert. Today is the auspicious day of Lohri and I am celebrating my 150th post with a sweet note “Boondi Rabri Ice-Cream”.
Well, today is a double celebration as it is my little sister’s birthday. I wish her lots of happiness and good luck in her life. Ice-creams can surely elate our mood. I mean who on this earth does not like ICE-CREAMS !! It is such a mood lifter and is so indulging. When you dig in the first bite of an ice-cream it soothes your senses and pacifies you. Yes, that is the magic it creates. I have attempted a totally new and super tempting recipe Boondi Rabri Ice-Cream”.
Recipe of Boondi Rabri Ice Cream
Ingredients:
2 cups – sweet Boondi (store-bought)
1 1/2 liters- high-fat milk
1 1/2 cup sugar (more if you prefer sweet)
1 cup -whipped cream
1 tsp cardamom powder
Method:
1. For the Rabri boil milk on a medium flame for 30 minutes stirring in between.
2. Once the milk has boiled and almost reduced to half the quantity add the sugar and cardamom powder.
3. Stir the milk continuously for another 10 minutes till it is thick and creamy.
4. Now Rabri is ready and we need to cool it for an hour at room temperature.
5. Now take 1 cup of sweet Boondi and make a coarse crumble in the food processor.
6. Mix this Boondi crumble in the Rabri and transfer it into an air-tight container.
7. Keep it in the deep freezer overnight or for 8 hours till it is set properly.
8. Remove the container from the deep freeze and let the Rabri and Boondi melt.
9. Beat the above mixture with a hand beater for 5 minutes till it is soft and creamy.
10. At this stage add whipped cream and rest of the Boondi in the soft and creamy mixture.
11. Fold the cream nicely with the help of a spatula and mix it properly.
12. Finally, let the Boondi Rabri Ice Cream set in the freezer for another 8-10 hours till it is firm and set properly.
