Custard Apple or Sitaphal Rabri is a thick, creamy, and delicious dessert. It is a traditional Indian dessert made with fresh custard apples and thick sweetened milk. Recipe of Custard Apple or Sitaphal Rabri

Ingredients:

1 liter high-fat Milk
125 grams Sugar
2 medium firm and ripened Custard apples (Sitaphal)
A handful of Almond and Pistachio shavings

Method:

1. Boil milk in a heavy bottom pan on a slow flame.

2. After it starts boiling, simmer it for 10 minutes and stir occasionally while boiling.

3. Add sugar and stir till sugar dissolves.

4. Boil for another 5-8 minutes till the milk has thickened and almost reduced to half of the quantity and your Rabri is cooked.

5. Now let the Rabri chill at room temperature.

6. Meanwhile, remove seeds from custard apple, grind to make a thick pulp.

7. Add the pulp into the Rabri once the milk cools and mix it well.

8. Refrigerate the custard apple Rabri for 2-3 hours and serve it chilled.

9. Garnish with dry fruits like Almond and Pistachios Shavings.

Tips and Important points

  • Always make any rabdi with full-fat milk for best taste.
  • However, since custard apples are sweet in taste, adjust the sugar in this recipe, and always start by adding little. You can always add more later.
  • Stir the milk at regular intervals to avoid milk sticking at the bottom.
  • Always add custard apple pulp once the milk cools down and not before that.
  • Use dry fruits of your choice.
