Strawberry Ice Cream with Cardamom Flavor

    V-day may come and go but we should not miss a single chance to make our loved ones feel special. This ice-cream is one of the ways I express my love for the lure of ice-creams which my family possess.
    So work your heart and try this bright…fresh and sassy strawberry ice-cream with a unique and rustic flavor of cardamom.


    2 cups– Fresh strawberry puree
    1/2 cup- fresh strawberry chunks
    1 1/2 liters- full fat milk
    1 1/2 cup- sugar (more if you prefer sweet)
    1 cup- whipped cream
    1 tsp- cardamom powder

    1)Boil milk on a medium flame for 30 minutes stirring in between.
    2)Once the milk has boiled and almost reduced to half the quantity add the sugar and cardamom powder.
    3)Stir the milk continuously for another 5 minutes till it is thick and creamy.
    4)Let it cool for an hour at the room temperature.
    5)Now take 1 cup of strawberry puree and mix it in the cold milk.
    6)Keep it in the deep freezer overnight or for 8 hours till it is set properly.
    7)Remove the container from the deep freezer and let it melt.
    8)Beat the above mixture with a hand beater for 5 minutes till it is soft and creamy.
    9)At this stage add whipped cream and strawberry chunks in the soft and creamy mixture.
    10)Fold the cream nicely with the help of a spatula and mix it properly.
    11)Finally let the ice-cream set in the freezer for another 8-10 hours till it is creamy and has set properly.
