Tomato and beetroot soup

Directions

This vibrant soup is full of flavor and nutrition. Its striking red color is very appealing to the eyes as well as to the taste buds. It has got lots of antioxidants properties and is very healthy. It is surely a heartwarming soup to have it on any dull days.


Makes 2 bowls-
1- medium size beetroot
4-5-medium size tomatoes
2-medium size onions
1 tbsp butter
6-7 cloves-garlic
1 tbsp fresh cream for garnishing
Salt and fresh ground pepper as per the taste

Method-
1)Peel the beetroots and chop them coarsely.
2)Chop the tomatoes and onions and boil all the above veggies in a pressure pan for 3 whistles on a medium flame.
3)Open the pressure pan once it is cooled down and puree the soup in a food processor.
4)Strain the soup and pour it in a bowl.
5)Take a small pan and add butter in it and once it melts add garlic and saute till 30 seconds.
6)Mix this to the soup and add freshly ground pepper and salt as per the taste.
7)Pour the hot soup into bowls and garnish it with fresh cream.
8)Serve it with bread croutons or bread sticks.
