This Sweet Corn Rice recipe is very simple with the minimum usage of spices as mainly this one is loved by my kids. However, it makes for the perfect school lunch and can be served as a quick dinner option too. Moreover, it becomes easy if you have boiled sweet corn handy or frozen ones.

Sweet Corn Pulao
Ingredients
- 2 cups of basmati rice cooked
- 1 tsp ginger minced
- 1 tsp ginger garlic paste
- 4-5 cloves
- 1 tsp cumin seeds/jeera
- 1 medium onion sliced into thin strips
- ½ cup boiled sweetcorns
- 1 tsp cumin powder/ jeera powder
- ½ tsp garam masala
- salt as per taste
- 1 tbsp cooking oil
- 1 tbsp coriander leaves finely chopped
Instructions
- Firstly, boil the rice till they are cooked al dente, strain the excess water, and keep it aside.
- Now boil the sweetcorn in a pressure pan till 4-5 whistles and switch off the flame. Once the pressure release and the pan cool down, open the lid and strain it and remove all the excess water and keep the boiled sweetcorn aside for 5 minutes.
- Heat oil in a pan, add cumin seeds, cloves, and minced garlic, and give it a quick stir for a few seconds. Now add onions to it and saute it for 2 minutes till onions change their color.
- Add boiled sweetcorn, ginger garlic paste, cumin powder, salt to it and mix it well.
- Once all the ingredients and spices are mixed well, add boiled rice to it.
- Stir everything together and fry for a minute. Do this on a medium flame, else the rice will stick at the bottom of the pan.
- Remove the sweet corn pulao from the pan and serve it with boondi or mint raita.
