Beetroot Rice

Beetroot Rice with step-by-step recipe picture recipe. This recipe of rice is very simple, easy, and done in 10 minutes. It is nutritious, tastes delicious, and looks so vibrant.

Whenever I have leftover rice I usually plan to make a simple rice variety.  This time I tried this Beetroot Rice recipe as I had boiled beetroot in my fridge. It requires very few and simple ingredients to make this. It hardly took me 10 minutes right from grating beetroot, chopping onions to quickly stir up this rice.  This recipe came out so nice and my husband and 1 relished it for lunch along with Mint Raita and papad.

Beetroot-RiceStep-by-Step Recipe of Beetroot Rice

Ingredients:

This recipe will serve 2

2 cups cooked rice
1/2 cup Grated Beetroot
1 small onion finely chopped
1 green chili finely chopped
1/2 tsp cumin seeds/jeera
1 tsp Cumin powder/jeera powder
salt as per taste
1 tbsp cooking sunflower oil
a handful of finely chopped coriander leaves

Method:

1. Firstly, keep all the required ingredients ready on a plate before you start to cook.

2. Heat oil in a pan, and when it is hot add cumin/jeera. Once it starts to crackle add green chilies and onion in it.

3. Now saute for a minute and add grated beetroot, coriander leaves, salt, cumin powder and cook for 1 more minute.

3. Finally, add cooked rice in the beetroot preparation and stir the whole mixture lightly. Cover the pan and cook it on a slow flame for 2 minutes and switch off the gas.

Beetroot Rice is finally ready to serve. Serve it hot, if you want to eat it later, then store it in a glass bowl and reheat for a minute before eating.

Notes:

  • Always use cooked and cooled rice for making this as it will taste the best.
  • It is always a good idea to make this beetroot rice from leftover rice.
  • Also, I will suggest to use boiled beetroot and then grate it. You can also use raw beetroot and grate but this will increase the cooking time.
  • You can add red chili powder also, however, I prefer using green chili in this recipe.
  • Instead of oil, you can also use ghee for the rice preparations.
  • For more crunch, you can add peanuts or cashew nuts.
