Ingredients
- 3 potatoes medium size
- 1 tbsp Olive Oil
- ½ tsp onion powder
- ½ tsp garlic granules
- 2 tsp minced garlic
- ½ tsp pepper powder
- ½ tsp chili flakes
- a handful of fresh parsley
- salt to taste
Instructions
- Firstly, pre-heat the oven to 200 C for 10 minutes and line a parchment or baking paper on a tray and keep it aside.
- Take 3 medium to big size potatoes and wash them well and dry before cutting them.
- Now cut each potato in half lengthwise as shown in the picture. Then cut each half into 2 again lengthwise so as to get 4 pieces.
- Finally, cut these 4 pieces into 2 halves lengthwise to get a total of 8 wedges.
- Take a bowl, pour olive oil, onion powder, garlic granules into it.
- To this add minced garlic, fresh parsley, and give a quick stir.
- Add salt, pepper powder, and chili flakes and mix everything well.
- Now add the potato wedges and toss them evenly till all the wedges are coated with oil and seasoning.
- Finally, place all the wedges on the baking tray with the skin side down and bake it for 45-50 minutes till they are brown and crispy.
- Turn the wedges once or twice in between to make sure they cook evenly.
- When they are baked switch off the oven and remove the baking tray and let it cool down for 5 minutes before serving.

Recipe Notes:
- Preferably use large Russet Potatoes for this recipe. Large size will give the exact shape of wedges. However, if not available you can use any other potatoes as well.
- You can try this recipe using sweet potatoes as well. Follow the same recipe and substitute Russet Potato with sweet ones.
- Cleaning and washing the potatoes is recommended as it will remove all the mud.
- We make wedges with potato skin so do not peel the potatoes.
- However, if you do not have fresh parsley, use fresh coriander leaves.
- Butter can also be used instead of olive oil.
- Stop baking at 40-45 minutes if you do no want wedges to be very crispy. However, we like our bit more crispy so baked it for 55 minutes.
- Turning sides of the wedges halfway are very important for even baking, so do not skip that step.
