Honestly, my party starts from Friday evening and goes on till Sunday evening leaving me tired and a little heavy on the stomach as I tend to indulge on some yummy food either at a resto-bar or at a friend’s place or at times me cooking it for my friends and hosting the party at home. Well, the point here is that I indulge in food over the weekend-YES!!
But Sunday evenings are a different story altogether…to avoid the guilt and to go little light on my tummy I usually end up making my own salad bowls with a nice and delicious dressing. After all, the dressing does all the trick to your salads. Try this very simple and humble Beetroot Green Peas And Coconut Salad recipe which happened on that one Sunday evening!!
Recipe of Beetroot Green Peas And Coconut Salad
Ingredients:
2 medium-size boiled beetroots
1 cup boiled green peas
1/2 cup fresh coconut slices
a handful of watermelon seeds
a handful of mixed dry herbs
For the dressing-
1 tbsp Extra virgin olive oil
1 tbsp vinegar
1/2 tsp minced garlic
Salt and pepper to taste
Method:
1. Mix all the salad dressing ingredients in a mason jar and shake well and keep it aside for a while.
2. Take a bowl and mix all the salad ingredients and keep it aside.
3. Now pour the dressing in the salad bowl and toss well till it’s combined properly.
4. This salad tastes best when it is fresh.
5. I will not recommend storing this salad to consume it for the next day. So prepare the exact quantity that will suffice for one time.
