This Broccoli and almond soup is nourishing, healthy, and filling. Broccoli is rich in Vitamin C and almonds are rich in Vitamin E so in short this bowl is totally packed with nutrition that tastes absolutely great.
The recipe is fairly simple and takes hardly 20 minutes to make. It can be a perfect and satisfying mid-week meal.
Recipe of Broccoli and almond soup
Ingredients:
1 A big floret of broccoli (chopped)
1 Onion minced
1 tsp Garlic minced
1 tsp Green chili paste
10-12 Blanched Almonds
1/2 cup Fresh cream
2-3 cups Veg stock
2 tbsp Butter
1 tsp Olive oil
SALT AND PEPPER AS PER TASTE
8-10 Almond flakes
Fresh basil to garnish
Method:
1. Take a non-stick pan and heat butter in it.
2. Add minced onion, garlic and green chili paste and saute for a minute.
3. Add chopped broccoli pieces in it and saute for another 2 minutes.
4. Now add vegetable stock and salt and let it boil for 10 minutes.
5. Switch off the gas and add blanched almonds and fresh cream.
6. Blend the above mixture in a blender till you get a smooth and creamy consistency.
7.. Heat the soup for 2 more minutes and pour it in the soup bowl.
8. Garnish with almond flakes, fresh basil leaves, and 1 tsp of extra virgin olive oil.
